Miki's boneless fried chicken w/o the breading

4 Boneless chicken breasts
Seasoning salt, pepper, Garlic salt

In large skillet add enough oil to coat 1/2 of the breast. Heat until very hot and add chicken breasts into the oil. Season with the seasoning salt, pepper, garlic salt and fry until the bottom half is almost done. Turn over and repeat with the seasonings. Continue turning your chicken until fully cooked. (Made this tonight too!)

Miki's BBQ baked boneless chicken breasts or steak

Line your cake pan with foil and place chicken or steak on inside the pan, leave at least 1/2 inch in between each piece.

Sprinkle spices (Seasoning salt, creole, crushed pepper, herbs, pepper, and other seasonings you love over the chicken.

For steak, add diced fresh garlic

Pour BBQ sauce over the top of the chicken or steak and cover with foil. Bake at 350 until done.

Lemonade Pie- This is soooo good

1 lg. bowl cool whip
1 lg. can minute maid lemonade (doesn't say if frozen or what so I will ask when I see her)
1 Can eagle brand milk
2 Graham cracker crusts

Mix cool whip and milk, then add lemonade, mixing well. Pour into crusts and chill until set.

Peanut butter pie-

1 8oz cream cheese
2 TBSP peanut butter
1 C. white sugar
1 1/2 Tub cool whip

Mix together and pour into Oreo Sweepstakes pie crust. Chill.

Whopper pie-

1/2 gallon vanilla ice cream (soft)
2 C. crushed whoppers
1 Graham cracker crust
1 tub cool whip

Mix together and pour into crust. Garnish with whoppers or fudge sauce.

Easy peanut butter cookies-I made tonight, real easy and goooooooood

1 C. peanut butter
1 C. sugar
1 egg

Mix ingredients well, roll into balls and place on greased or buttered baking sheet. Flatten balls (I used a fork). Bake at 350 for about 10 minutes.

Corn flake candy-

1 C. sugar
1 C. Karo syrup
1 C. peanut butter
4 1/2 c. crushed corn flakes

Bring sugar and Karo to boil. Add peanut butter and remove from heat. Add cornflakes and mix well. Pour into buttered pie dish and let cool

Peanut clusters-

1 Package Chocolate Sweepstakes & Giveaways chips
2 TBSP peanut butter
2 C. salty spanish peanuts

Melt chocolate chips and peanut butter, add peanuts and mix well. Drop on greased cookie sheet by teaspoons. Cool in freezer.

Spicy pecans-

1 Egg white, beaten
1 TBSP water
2 TBSP butter
1/2 c. sugar
Dash of salt, cinnamon, nutmeg and cloves

Beat egg white with 1 TBSP water until frothy, set aside. Melt butter in pan stirring frequently and add ingredients.

Coat pecans in egg white mixture then place them into the seasoning/butter mixture.

Place pecans on pan and bake at 250 until done.

Banana bread-

1 C. crisco
6 Over ripe bananas
2 1/2 c. Self rising flour
2 C. sugar
4 eggs, beaten

Mix together and bake at 325 for 1 hour and 15 minutes

Savory beef over rice-

2 TBSP flour
1 can stewed tomatoes
1 envelope onion soup mix
1/2 C. water
1/4 TSP pepper
1 LB sirloin cut into thin strips

Preheat oven at 350. Shake flour into a reynolds oven bag. Place in 9 X 13" pan. Add tomatoes, soup mix, water and pepper. Squeeze bag to blend. Add beef and turn the bag over to coat the beef. Close bag with nylon tie and cut 6 slits into the bag. Cook until done and serve over rice.

Mac. & cheese
Boil macaroni, drain

Place slices of velveeta cheese on the bottom of a glass casserole dish
Pour macaroni on top of the cheese
Pour some milk over the top
Scoop in some margarine

Bake (stir to keep from sticking) until all is melted and thickened.

Sorry, no measurements to give. I didn't see how much she used. It was so good and I don't care for home made mac & cheese.
 
Dh wants my homemade enchilada's, said he has been craving them for awhile now so I picked up the stuff I needed while out grocery shopping.

2nite: Cooked spagehtti noodles topped off with Chunky Clam Chowder (Campbell Soup Chucky), a dash of black pepper, fresh crushed garlic, parmasean cheese and a side of French Bread. (I'm being lazy today).....
 
You are welcome. Last night we made pigs in the blanket with shredded cheese and I had 4 biscuits leftover so I cut a piece of sandwich ham into 4 and made ham and cheese rolls, they actually turned out pretty good.

Made homemade shortbread cookies last night from scratch but, since I didn't have a way to properly measure the butter, they didn't turn out the way they were suppose to but, I made some homemade frosting and they taste fine.

Tonight I am making Taco's.
 
Its my youngest's bday so he gets to pick. Im guessing its gonna be mickey D's. Maybe I can talk him into going to ruby tuesday's or something. :laughing: I cook when I have to. I hate it. My husband loves to cook and if he gets home early enough he does the cooking. fine with me. He cooks much better than I do. Maybe because he cares. :laughing: The way I see it if I dont kill anyone I have done a good job. He even makes his own BBQ sauce. omg! its sooo good. getting hungry here.

Last Night Pizza & a movie (We watched The Brave One(great movie)

2nite.... We are taking a mini vacation over night staying at the Embassy Suites in Monterey, Cali., so for dinner we're eating on the pier... Clam Chowder in a bread bowl, for desert Caramel Apples.....
 
I am looking for a recipe guys ~ it is a cresent roll that you roll out and then you mix sausage and cream cheese together and bake it. I'm not sure, but I think that is the only ingredients. Not sure how much to use of each, how high to set the oven, and how long to cook for.

I had this fattening thing at a wedding shower sometime ago and I am trying to get some recipes together for a baby shower, and this one was really good ~ even cold. Would love if someone had it ~ thanks!
 
That sounds yummy. Have you tried Betty crocker or pilsbury websites? They usually have a ton of recipe's. I found some I want to try soon.

Tonight I was going to make hamburgers but, my meat didn't finish thawing and I hate trying to thaw in the microwave or in water because, my hamburger falls apart. I ran to the country store and picked up a couple cans of chili to make chili dogs on reg. bread.
 
I took some boneless chicken breasts and seasoned them, tossed in a little oil unbreaded and cooked until done. It was really yummy. I served baked beans, fried seasoned potatoes and a veggie.
 
There's NOTHING like authentic mexican food!! Even the toilet agrees :laughing:

Since I didn't spread out our red meats the way I was suppose to after tonight we have just chicken left so I am gonna have to get very creative this week until I can go shopping for some more meat.

Tonight, marinade cube steaks in Teriyaki pineapple marinade. I will toss it in the frying pan when time and the sauce should thicken on the meat and turn out yummy and tender.
